How do you remove totals when creating an ad hoc view - I want the actual text to appear, rather than totals?

I don't seem to have the tool bar beneath the layout band to select the different labels and functions. for tables, crosstabs and charts - how do I achieve this?  

I've read that you should be able to right click and delete totals, but they are not disappearing?

I'm "deleting row summary", but that doesn't seem to do anything?

And when I export to excel or pdf, the ad hoc view is completely blank?

Please add further information with some screenshot of the requirement or a short video? You should easily be able to do this via studio as well.
